Put your fries into a bowl, fill it with cold water, and put it in the fridge for 1 about hour. (This removes starch from the surface and helps make it crispier in the end.)

Step 3

After your hour, we're going to "blanch" the fires. Softly boil the fries for about 5 minutes. (This is to help pre-cook the fries and give them a nice, fluffy interior.)

Prepare your air-fryer.

Step 6

Prepare your air-fryer. I'm using the Instant Pot, so I'm going to use the air fryer lid and spray the basket with a non-stick coating. If yours uses a flat rack, take it out, make sure it’s free of debris, and give it a spray with the non-stick. If it has a pre-heat, do that now. (400 F)

Carefully toss your fries in Olive Oil, Salt, and Pepper.

Step 7

Take your dried fries, and put them in a bowl. Be careful, they might be soft, so don't break them! Add in a bit of olive oil, salt, and pepper. Gently toss. We're creating tiny crags on the surface of the potato that will turn into those wonderful crispy, crunchy bits. The better you are at this, the better your fries will get.

Gently place fries in your air-fryer. I cook mine at 400 F for 20 minutes.

Step 8

Gently place in your air-fryer and cook. I'm using 400 degrees F for about 20 minutes, making sure to toss every 5 minutes or so. If you have the flat rack, give them a flip at least once halfway through cooking.

Remove from the air-fryer and let cool. Them middle WILL be hot. About 2-4 minutes should do it, but be warned.

Add some ketchup and call it a night!
