The Best Breakfast Quesadilla
Bacon Egg and Cheese Quesadilla
Breakfast should be delicious, easy to make, in a sandwich shape, and contain bacon. Right?
If you agree, you’re in the right place. This bacon egg and cheese quesadilla is super simple to make, easy to eat on the go, and of course has bacon. I actually do this daily as a food prep. I’ll make all the bacon and eggs for the week and just heat up the cheesy tortilla in the morning.

Bacon Egg and Cheese Quesadilla
Ingredients:
2 Eggs
2 Slices of Bacon
Shredded Cheddar Cheese
Tortilla
Butter

Recipe:
Step 1
Fry up 2 strips of bacon. I like mine crispy, so if it bends when you push at it, flip it again. Set aside to cool.
Step 2
Fry up 2 eggs. Break the yolk and give it a bit before you flip it. Your spatula should slide under the egg without to much trouble. Set aside.
Step 3
Turn down the heat on your cook surface to a low or medium low setting and wipe off any bacon bits that stuck.
Step 4
Take your butter and rub it on y our cook surface making a nice circle the same size as your tortilla.
Step 5
Take your tortilla and place it on your butter circle. I give it a spin to really soak it up.
Step 6
Take your cheese and add a thin layer all over your tortilla.
Step 7
Place your 2 eggs and 2 strips of bacon down on a single side of your cheesed tortilla.
Step 8
Once you notice your cheese starting to melt, carefully fold your tortilla over covering the eggs and bacon. Don’t burn your fingers!!
Step 9
Keep flipping your tortilla every 15 to 30 seconds until each side is golden brown. You should be able to drag your spatula across the top and hear the crust. (Once you learn your cook times, you can flip it less often. Just don’t burn it!)
